Apple Cake
2 cups all-purpose flour*
1 cup whole wheat flour*
1 tsp salt*
1½ cups granulated sugar*
1 tsp baking soda*
1¼ cups unsweetened apple sauce
2 tsp vanilla extract*
3 eggs, beaten
4 cups chopped apples
1 cup chopped walnuts, optional*
Glaze:
1 ¼ cups packed brown sugar*
1/3 cup milk
½ cup butter*
Preheat oven to 350 degrees F. Grease and flour a 9”x13” pan.In a large bowl, sift together flour, sugar, salt and soda. Make a well in the center and add applesauce, eggs and vanilla. Mix well (batter will be thick). Fold in chopped apples and walnuts. Pour batter into prepared pan. Bake for 40 to 50 minutes, or until a toothpick inserted into cake comes out clean. While the cake is baking, prepare the glaze by combining brown sugar, milk and butter in a saucepan. Bring the mixture a boil and cook for 2 minutes and 30 seconds, stirring constantly. Pour the batter over the hot cake or serve on the side for dipping.
